Sweet Potato, Black Bean, and Broccoli Saute

Serves 6

Ingredients:

  • 3 tablespoons coconut oil

  • 1 large sweet potato, diced

  • 2 heads broccoli, stalks cut into matchsticks, florets cut into bite-sized pieces

  • Salt and freshly ground black pepper

  • Zest and juice of 1 lemon

  • 1 (15-ounce) can black beans, rinsed, drained

  • 3 garlic cloves, minced

  • 1/4 cup finely chopped fresh cilantro

  • 1/3 cup pumpkin seeds (pepita)

  • Vegan sour cream (optional)


Directions:

  1. Heat oil in a large skillet over medium heat.

  2. Add sweet potatoes and broccoli. Season with salt and pepper.

  3. Cook vegetables, stirring often, until sweet potatoes are just tender.

  4. Add lemon juice and zest, black beans, and garlic. Cook, stirring, until beans are heated through.

  5. Stir in cilantro and remove from heat. Serve hot, garnished with pumpkin seeds and sour cream, if using.
