Vegan Raspberry Oat Squares

Makes 16

Ingredients:

  • 3/4 cup vegan butter

  • 3/4 cup packed brown sugar

  • 1/4 cup granulated sugar

  • 1 teaspoon pure vanilla extract

  • 1 cup all purpose flour

  • 1/2 cup almond flour

  • 2-1/2 cups old-fashioned oats

  • 1 teaspoon ground cinnamon

  • 1-1/4 cups raspberry preserves

  • 1 cup chopped walnuts


Directions:

  1. Preheat oven to 375 degrees F. and grease a 13x9-inch baking dish.

  2. In a stand up mixer fitted with the paddle attachment, beat butter and sugars until creamy. Blend in vanilla.

  3. Add flours, oats, and cinnamon and blend well. Reserve 3/4 cup of the oat mixture and press the rest onto the bottom of the prepared baking dish.

  4. Spread preserves over the oat mixture.

  5. Combine reserved oat mixture with walnuts and sprinkle evenly over preserves.

  6. Bake for 25 minutes. Transfer to a wire rack to cool completely in the dish.

  7. Cut into squares and serve. Store in an airtight container layered with waxed paper.
