Farro Salad with Artichoke Hearts and Walnuts

Serves 4

Ingredients:

  • 1 cup farro

  • 3 cups water

  • Salt

  • 8 ounces chopped marinated artichoke hearts (drained)

  • 1 cup coarsely chopped toasted walnuts

  • 4 green onions, sliced (green and white parts)

  • 1/2 cup coarsely chopped roasted red peppers

  • 1/4 cup finely chopped fresh parsley

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon white wine vinegar

  • Freshly ground black pepper


Directions:

  1. Toast the farro in a dry medium-sized saucepan over medium-high heat until it is fragrant.

  2. Remove pan from heat and add water. Add a pinch of salt and bring to a boil.

  3. Reduce heat to medium-low, cover pan, and cook for 40 minutes or until farro is tender.

  4. Drain and rinse farro. Place farro in a large bowl and add remaining ingredients.

  5. Stir well to combine. Serve immediately or chill and serve cold.
