Caraway Cabbage and Apples

Serves 4 to 6

Ingredients:

  • 2 tablespoons olive oil

  • 2 large apples, cored, sliced

  • 10 ounces shredded green cabbage

  • 1 cup apple cider

  • 1 teaspoon caraway seeds

  • 1 tablespoon Dijon mustard

  • Salt and freshly ground black pepper


Directions:

  1. Heat oil in a large skillet over medium heat. Add apple and cabbage and cook, stirring often, until cabbage starts to soften.

  2. Add cider, caraway, and mustard, stirring to combine. Bring mixture to a low boil.

  3. Cover skillet, reduce heat to medium-low and simmer for 5 minutes. Uncover, stir again, and continue to simmer if apples are not tender.

  4. Season with salt and pepper. Serve hot.
