My kids are always hungry, always. They are constantly searching the fridge and pantry hunting for anything to fill their bellies. This is why I am very conscious of what I keep handy. However, we are a two parent household and Mr. C loves to fill out freezer with ice cream and our cabinets with special “I’m sorry daddy works so late” treats.
The rule in our house is a healthy snack before a not so healthy snack. Even so, their bellies don’t seem to ever get full. That is why I love these no-bake protein bites. Served with a smoothie they are just enough to get them through until the next meal. As an added bonus they are so delicious the kids think they are getting a “special” treat from mom.
1 Cup Dry Oatmeal
1/2 Cup Chocolate Chips (I use the minis)
1/2 Cup Peanut Butter
1/2 Cup Ground Flaxseed
1/3 Cup Honey
1 tsp. Vanilla
Mix all the ingredients together. The mixture will be a bit crumbly. That’s okay. You can use a cookie scoop or you hand to form mix into balls. Roll together with hands until the ball forms and sticks together. This recipe will make 12 large bites or 24 smaller bites. Your call. Place bites on a wax paper lined platter or dish and put in fridge for at least 30 minutes. Transfer to an air-tight container.Tips:
**You can add just about anything to this recipe. Dried fruit, coconut flakes, chopped nuts and whey protein are just a few.
**Spray measuring cup with Pam before pouring in honey and peanut butter. This will help the ingredients slide right out of the measuring cup and make clean up easier.
**Kids tend to eat what they make. This is the perfect treat to let the kids help make. Our kids love to roll their own bites. After I make them wash their hands, of course!
