Hello. This is my first post here. It's been more than six years since I've had a newborn in the house, but we are halfway through week two and so far everything is going great!
Thanks to my wonderful husband, I get to be a SAHM which is also a big change. I plan to use my newfound free time to do the things I have been wanting to do, but just haven't had the time. First, and most important, I get to spend more time with my family. I feel as though I have been neglecting my three older children over the past few years because I've spent so much time at work. Then, I get to spend more time in the kitchen...I love to cook. Also, I plan to do more crafty stuff, including sewing. There is so much more I want to do. I can't wait!
Well...I'll start doing the fun things when I am not so tired!! I couldn't have asked for a better baby though. He is finally establishing a sleep pattern where he stays up a little during the day and sleeps well at night.
I hear my big kids calling. They are ready for lunch. Then, I promised them we would make oatmeal cookies and homemade chocolate syrup. We are making the boiled oatmeal cookies that my mom always used to make me and my brother and sister when we were growing up. It's the only way my mom could get me to eat oatmeal. Here is the recipe:
Boiled Oatmeal Cookies
3 cups oatmeal
2 cups sugar
4 Tbsps. cocoa
1 cup peanut butter
1 stick butter
1/2 cup milk
1 Tbsp. vanilla
Bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. Drop mixture by teaspoonfuls on a sheet of waxed paper, until cooled and hardened.
