With fall in the air and Thanksgiving approaching, I have been in a cranberry mood. A couple weeks ago I made an excellent turkey sandwich that had whole berry cranberry sauce in it. I also have been thinking about making my own whole berry cranberry sauce for Turkey Day.
However, enjoying one sandwich wasn't enough to satisfy my craving for cranberries. And with Thanksgiving still 2 weeks away, I needed to find another way to incorporate cranberries into a meal. So. the other night I decided to make a salad for my husband and me. To top the salad I tried my hand at a cranberry vinaigrette.
The recipe was a winner! The combination of tart cranberries, a pinch of sugar, and cider vinegar made a delicious dressing that we both enjoyed.
