Once school starts, "easy" goes out the door. And even after all these years and five kids later, I still haven't figured out why but I have come up with some clever ideas to "beat the heat" of ho hum morning meals.
One of the easiest has been my Easy Poached Eggs. All you do is spray your ramekins with non-stick spray, crack an egg into each one, and let the boiling water do its magic for 10 minutes. It's that easy.
Then, you can make my Easy Breakfast Sandwich, that mimics the ones you pay $$ for at a big fast food restaurant. But you don't have to pay the price or take the time to wait for it to be made. In fact, whether you make one or more, all it takes is less than 10 minutes from start to finish. Now that's what I call speedy delivery!
But what if you don't want to go through the hassle of cooking on the morning of? I've got you covered. Try my Easy Hard Boiled Eggs in the Oven. You bake (you heard me right) your eggs at night and immediately take them from the oven to the fridge for an overnight cool. In the morning, you just peel and eat. Easy peasy!
Hint: You can even take any leftover hardboiled or poached eggs and chop them up for a delicious Easy Egg Salad that is so simple, you'll wonder why you don't make it more often!
So here's to the morning rush hour at your home. Make it quick and simple or as I love to say: "It's easy as 1, 2, 3!
