Easy Lemon Crockpot Chicken

This is perhaps one of my favorite recipes for an easy dinner or when whole chickens go on sale.  
This is not so much a recipe as a method of cooking chicken.  I will alter the seasonings as the seasons change to take advantage of the different ingredients available.

  • 1/2 cup of lemon juice
  • sea salt
  • bay leaf
  • olive oil
  • chicken
  1. Wash the chicken thoroughly inside and out
  2. Rub the chicken with olive oil and sea salt
  3. Insert bay leaf under the skin
  4. place in crockpot and cook for 4 hours on high heat or 8 hours on low.

  I served mine with brown rice and green beans, but it is good with a salad too. 
*don’t forget to save the bones and liquid to make  Overnight Crockpot Broth, just pop them in the freezer till you get a chance to make it, or make it right away. If you choose the latter than you don’t have to wash out your crockpot.
