Quinoa came into my life about three years ago during an accidental over perusal of healthy eating blogs ~ at first, I was not crazy about it; I definitely considered it a test – for my tastebuds!
But as I read more and more about it, I began to realize what a nutritional power house it was-is! Quinoa is said to be the only grain that can provide almost eight grams of protein per cup (cooked) – and that’s a big chunk out of our daily 46-56 gram requirement (depending on activity levels and gender)! Quinoa is also said to be low in fat and cholestrol and also high in iron, fiber, calcium, and magnesium; among other nutrients. While I have only used quinoa in savory dishes so far, I decided to experiment with using it to make something sweet for breakfast….and so this “breakfast quinoa with blueberry sauce” happened
Ingredients (for 2 servings)~ For the Quinoa: 1/3 cup quinoa 3 tablespoons oat bran (optional) 1.50 cups almond milk 0.25 cups water 1 tspn cinnamon 1/2 tsp salt 3 tablespoons brown sugar
For the Blueberry sauce: about a handful of blueberries 1/4 cup water 3 tablespoons brown sugar 1 tspn butter (I did not add any this time so its totally optional)
Bring the quinoa, almond milk and water to a boil and then lower heat and cook for 15 minutes, then add oat bran, cinnamon, salt and suagr and cook another 20 minutes. While cooking, I had to check on the quinoa and add a splash of water/almond milk at times to keep it from catching. For the blueberry sauce, I just simmered all the ingredients (low heat) for 15 minutes and served over the cooked quinoa. For peanut butter lovers (myself included) peanut butter can be used as a topping or yogurt of your choice.
