Bok Choy: Plain And Simple

Bok Choy, or Chinese cabbage, is one of the healthiest and most delicious vegetables you can buy. And it’s one of the easiest to prepare. Some vegetables taste best plain — this is one of them. I like to prepare it with as few ingredients as possible. Sometimes I will make it with nothing but a touch of salt. Other times, I’ll saute a little garlic and ginger with it. And, if I want to get real “fancy”, I’ll drizzle it with some toasted sesame oil when it’s done.

In Chinese medicine, Bok Choy is used to quench thirst, aid digestion, prevent constipation and treat diabetes. It is rich in vitamin C, beta-carotene, folate and fiber. And there are only 20 calories in one cup of Bok Choy. So, it’s good for you, easy to make, and tastes good. What are you waiting for?

Either version is great. To prepare it, put it in a bowl of cold water and stir it around. Wait a few minutes so any dirt that’s in between the leaves settles to the bottom of the bowl, then lift the Bok Choy out of the water. If using regular-size Bok Choy, cut each head vertically in quarters. The baby version can be left whole.

To prepare it the simplest way possible, heat a large skillet over medium heat. Lift the Bok Choy out of the water and put it directly into the pan. Sprinkle with a little salt. Cover and let it steam.

Or, you can saute it in a little oil with some garlic and ginger…

I would normally include a recipe here at the end of the post. But all you need is the Bok Choy, water and a pinch of salt.  Take it off of the heat when it starts to wilt; don’t overcook it.  Really, it’s that simple.  If you have any questions, just leave me a message…
