The last couple of months, Jason and I have decided to try and save a little more, budget a little more and prepare for the day that we get to adopt more children. One area that we can improve is in groceries. I like to cook most our meals at home and I like to try new recipes and cook "whatever" I want. After we recovered from the housing market crash and our millionaire dollar babies, the last couple of years, I haven't wanted to have a "grocery budget," I've just wanted to eat healthy and not worry about the cost. But, now that we are saving and preparing for our family to grow, I decided I could try harder in the "grocery" area of our monthly budget. We have started price matching at Wal-Mart. I'll be honest, I actually haven't tried it yet. :-) Jason takes Ashlyn and Addison every Thursday while I teach piano. It has been great! I make a grocery list with all the price matching information and then Jason goes shopping. He is my lifesaver! Then, I've thought of a few yummy but CHEAP meals and we throw a few of those in each week to save a little more.
Here is an EASY and yummy RECIPE that is ONLY 25 CENTS per serving / person!!! You can't beat that!!!
BEAN TOSTADAS - $.25/serving
6 inch flour tortillas
1 can refried beans [I like Rosarita No Fat Traditional - or homemade refried beans are great too.]
1 small jar of salsa [we bottle fresh salsa from our garden every year...or we like Costco's salsa.]
1 cup shredded Cheddar Cheese
1 cup shredded Romaine Lettuce
1 Tablespoon Ranch Dressing or Sour Cream for topping
*Optional: ADD taco meat...ground beef, shredded pork, chicken, etc. Also, you could ADD grilled peppers and onions. This will add more cost to this meal.
Preheat oven to 400 degrees. Mist every other cup of a 12-cup muffin tin with nonstick cooking spray. Press a tortilla into each sprayed cup, flattening out edges and bake until golden and slightly crisp. About 8 minutes.
Spoon refried beans into each tostadas, top with salsa and cheese. [We like to make thin layers of those 3 ingredients. Also, sometimes we add taco meat.] Return to oven and bake until warmed through, 7 to 10 minutes.
Place each tostada on a plate and top with lettuce and Ranch or sour cream and/or more salsa.
