I'm excited to share another of my favorite meatless meals, and I especially love to make this combination of chewy whole wheat spaghetti with garlic, chard, and cheese in the fall when I still can get chard from my garden. The chard (also called swiss chard or silverbeet) is sauteed in oil that's been seasoned with minced garlic, and then it's folded into hot whole wheat spaghetti and sprinkled with flavorful Pecorino-Romano cheese. Of course, you can use this same cooking method with any type of greens or cheese, and even use white flour pasta if you insist, but for me this combination is just right.
