Whole Grain Pumpkin Penne Pasta combines two of my favorite healthy flavors...pumpkin and whole grains. Comfort food at it's best, flavorful and healthy too. Fall has arrived and the leaves are turning. The nights are cool and call for a cozy night in front of the fire with a bowl of Whole Grain Pumpkin Penne.
1 10 oz package whole grain penne pasta
3 Tablespoons Flour
2 Cups Fat Free Milk
14.5 ounces reduced sodium chicken broth
4 cloves garlic
1 Tablespoons olive oil
1/2 Cup freshly grated parmesan
1/2 Cup canned pumpkin
1/4 cup minced fresh parsley
1.5 tsp minced fresh sage
dash of nutmeg
Cook Penne Pasta
While pasta is cooking stir flour, milk and chicken broth together, set aside.
Saute garlic in olive oil.
Slowly stir in milk mixture, parmesan, canned pumpkin, parsley, sage, and nutmeg.
Cook until thickened, stirring occasionally. Add Penne Pasta and stir. Top with 1/4 cup toasted chopped walnuts.
This delicious fall season dish can be dressed up or down to your liking. You can use virtually any kind of pasta with the sauce including ravioli and tortellini. Add broccoli or asparagus and some sliced cherry tomatoes to add some flavor and color as well. Serve it as a side dish to fish or chicken or any meat that you like or eat it by the bowl full in front of the fire with someone you love. That is my favorite way to have it.
