Bring up the subject of winter squash in a crowd and someone will immediately say they don't like it. When I hear this, I always wonder whether the person has ever tried roasted squash. Of course I'm a believer in roasting vegetables of every kind, but winter squash takes especially kindly to roasting at high temperatures, turning golden, slightly sweet, and caramelized while it cooks. Roasted squash also pairs well with lots of other delicious flavors such as butter, lemon, lime, orange, tahini, soy sauce, herbs, maple, feta cheese, blue cheese, nuts, and garlic, so the possibilities are pretty much endless.
You've probably heard that BlogHer is doing A Month of Side Dishes during December, and I think roasted winter squash is about as good as it gets for a winter side dish, so I'm writing today to propose you try one of these recipes for your weekend menu. In Tuscany, Ilva from Lucullian Delights creates Oven-Baked Winter Squash with Herbs, Orange, and Pistachio Nuts, a combination I think sounds delightful.
It's only a little more work to assemble than plain roasted squash, and this Roasted Butternut Squash and Thyme Crumble from White on Rice Couple looks like it would be worth the effort!
