Vegan Lentil Chili with Roasted Red Peppers, Olives, and Green Onion from Kalyn's Kitchen
It's count-down-to-the-Superbowl week, so I'm guessing a lot of people are on the hunt for the perfect chili recipe for the big game. Doesn't chili and the Superbowl just automatically go together? I'd never had chili made from lentils, but when I tried this Vegan Lentil Chili with Roasted Red Peppers, Olives, and Green Onion, I loved the slight sweetness that the lentils added to this barely-spicy chili. If you make this for Meatless Monday, I'm betting you might want to make it again soon, and maybe even for game day.
