Vanilla Biscotti: So Good You Have to Eat at Least 2

I'm not going to lie. The reason for this was to cure my urge for biscuits. For some strange reason I didn't have a single one in the house and I'm pretty sure that that is illegal.

So I scoured my recipes books the night before trying to work out what I could make with limited ingredients. After searching for a while I came across a recipe for almond biscotti.  I love nuts with one exception--almonds--so for that reason alone I didn't have them sitting in my cupboard.  So I thought that I'd subistute the almonds for one of my favourite flavours: vanilla.
I even woke up slightly earlier yesterday morning so I had enough time to make, bake and photograph these. The recipe makes around 15 pieces. I ate a few this morning before leaving for work. By the time I got home only 4 pieces were left, so it's safe to say it's a hit!

You will need:
250 g plain flour
1 tsp baking powder
pinch of salt
150 g golden caster sugar
2 tsp of good quality vanilla extract

Preheat the oven to 180º/ gas mark 4. Line a baking tray with greaseproof/baking paper.

Sift together the flour, salt and baking powder into a bowl.

Add the sugar, eggs and vanilla extract into the bowl. Mix to form a dough. You may need to add the smallest amount of milk if you find that it's not coming together.

Roll the dough into a ball and cut in half.

Roll each half into a log shape about 4 cm long.

Place the "logs" onto the baking sheet and bake for 10 minutes.

The biscuit needs to be hard when it comes out after this bake otherwise you won't be able to cut it without the dough sticking to your knife.

Leave the biscuit to cool for 5 minutes. Then cut into slices.

Return the biscuits to the oven for a further 15 minutes or until lightly golden.

Leave to cool and harden.

Enjoy with a cup of coffee or tea!
