My boys are getting very spoiled this Valentine’s Day with all of these sweet treats I keep making.
The crazy thing of me being a mom to 4 boys is that I have never made Chex Mix before. I know….. CRAZY!! It very possibly was my subconscious doing me a favor because this Momma is in LOVE!!! What a sweet delicious treat. Did I really say I made this for my boys?? LOL I may eat it all!
What you will need:
- 8 cups chex mix (I used chex mix and cheerios)
- 3/4 cup brown sugar
- 6 TBSP butter
- 3 TBSP light corn syrup
- 1/4 TSP baking soda
- chocolate wafers for melting
- caramels for melting
- conversation hearts
- sprinkles, crystals, sugar pearls.. whatever you would like for decorating
Line a baking sheet with wax paper and set aside. Put your chex mix & cheerios into a big bowl.
Add the brown sugar, butter, and corn syrup into a microwave safe dish. Microwave for 1 minute and then take out. Stir and add in the 1/4 TSP baking soda. Stir well and return to the microwave for one more minute. Stir into the chex mix & cheerios and mix well. Pour mix onto the wax paper, spread it out and let it cool for 15 minutes. Once cooled break into bite size pieces, I did not do this first but should have.

Once cooled the real fun begins. I melted my caramels first. Drizzle melted caramel onto chex mix. I started to add some sprinkles at this point as well.
Now melt your chocolate (of course I used pink) and drizzle over you chex mix. With your chocolate nice and melted it will act as a glue. This is when you will want to add your M&M’s, conversation hearts and any other sweet candies you want. Have FUN!
You can put them in cute cupcake liners or serve however you like. It will not last long.
