Two vegan education classes in Colorado Springs this June: Beyond Meatless Mondays + Summer Soups & Salads
My April Beyond Meatless Mondays class is now full (email me if you would like to be placed on the waiting list) and I have only a few spaces remaining in my May cooking demonstration classes. I am so pleased that people are interested in exploring plant-based eating and a vegan lifestyle!
Each time a class closes, I open up another; this time I opened up two!
- I have added a one-session (three-hour) Beyond Meatless Mondays class Saturday, June 15. I’m offering my vegan lifestyle class on one day in June – instead of in two sessions – based on feedback from student evaluations and because my summer conference and speaking schedule is crazy! Evening, multiple session classes will resume in the fall.
- I have added a two-hour Summer Soups & Salads cooking demonstration class Saturday, June 22.

Beyond Meatless Mondays with JL: Dive Deeper into Plant-Based Living Saturday, June 15
Have you been trying to incorporate more plant-based meals into your diet? Do you struggle with maintaining a plant-based diet at school or work or finding vegan meals at restaurants? Do you want to learn how to veganize your wardrobe, your household cleaning supplies and your health and beauty routine? JL Fields launched the vegan lifestyle class Beyond Meatless Mondays with JL: Dive Deeper into Plant-Based Living. This class begins in the kitchen and extends to your work or other social setting, the grocery store and restaurants, and concludes in your closet and household cupboards.
A Colorado Springs-based vegan lifestyle coach and educator and co-author of the forthcoming Vegan For Her: The Women’s Guide to Being Health and Fit on a Plant-Based Diet, JL Fields holds a Master of Science degree in College Student Personnel Administration, has studied Adult Learning Theory at the advanced graduate level, and is currently completing a certificate in fitness nutrition. She served as adjunct faculty at Long Island University-CW Post in New York for five years.
A devoted culinary student and joyful vegan, JL Fields will provide a supportive, small group-learning environment (capacity 15). You will learn from your fellow classmates as you explore issues related to a plant-based diet and a vegan lifestyle. You will gain skills to cook and eat a balanced and interesting plant-based diet (including meal plan suggestions!) and you will develop strategies for maintaining your plant-based diet at work or school and out in the world.
The class meets for three hours on Saturday, June 15, from 1:00 pm – 4:00 pm in a fabulous space in downtown Colorado Springs. We will cover two main areas:
In the Kitchen and on the Plate: Vegan Transition and Cooking Basics
In the World: Staying Plant-Based at Work or School and in Social Situations
Light vegan, gluten-free refreshments will be served.
Class fee is $20; advanced registration is required:
