Planning a Meatless Monday dish to make on the Monday after Easter is a no-brainer for some people, because there are all those Easter hard-boiled eggs that need to get turned into something resembling a meal. I'm a huge fan of hard-boiled eggs any time of year, and this Egg Salad in Pita with Green Olives, Green Onions, and Dijon is one of my favorite ways to use them. If you've never considered adding green olives to egg salad, I highly recommend it!
