There are a lot of reasons to like this meatless Tomato and Peanut Soup with Sweet Potatoes, Kale, and Chickpeas from Dinner with Julie. In her introduction, Julie says she's realized she requires "thick, spicy soup in early January as a physical and psychological ballast against the chocolate high that was December." No doubt a lot of people understand that feeling, but for me it was simply so many of my favorite ingredients in one dish that made this sound like a perfect Meatless Monday Meal.
