Sweet Potato Pudding
1½ lbs sweet potatoes (5 sweet potatoes) (2 cups)
1 cup sugar
½ cup butter
1½ teaspoons baking powder
¼ cup flour
1½ teaspoons cinnamon
1½ teaspoons nutmeg
1½ teaspoons ginger
2 tablespoons water
- Sift all dry ingredients together into a mixing bowl.
- Add margarine, sweet potatoes and water.
- Beat about 300 strokes by hand or 2 minutes with electric beater.
- Add eggs, beat 2 minutes longer.
- Bake at 350°.
