I've gotten into a post work routine of changing into sweats, letting the dog out and plopping down on the couch to watch five hours of Hallmark or LIfetime Christmas movies. It gets dark at 5:15. What else am I supposed to do? According to my internal alarm clock darkness = bedtime. I can't even begin to explain how unproductive I've been. My house is suffering. So are the untouched gray hairs which are becoming way too obvious.
I woke up this morning and made a command decision that I would be productive when I got home from work. The first step would be to put away the rack for my roaster which has been sitting on my kitchen counter since Thanksgiving. Don't worry. I put it away. I just hope I can find it a year from now when it's time for it to be put to work again. I also cleaned out my fridge, finished a load of laundry and as we speak I'm "cleaning" the dishwasher with one of those Pinterest tricks. We'll see if it works.
Where am I now you ask? I'm on the couch. I sit here every night and wonder what on earth I would do if I had children?! How do you moms do this? I imagine you never sleep and barly eat which means that most of the time you're in a zombie state? You are all my heros! Raising children is a full time job in itself, but raising them while working a job outside of the house (or even in the house)? Kudos friends. Seriously. I wish that I could give you all a vacation.
What is this post actually about anyway? I got lost in thinking about all that still needs to be done. Then I started day dreaming... Oh, yes, Sweet Basil Garlic Bread. This stuff will make you forget all your worries. It is THAT good. I guess I am a little bit partial since it is kind of my recipe after all. Well, without further delay, here it is.
Garlic Basil Cheese Bread
1 loaf sweet italian bread (or any loaf bread you prefer)
1 stick of butter
3 cloves of garlic, finely chopped
4 basil leaves finely chopped
1 (16 ounce) bag of mozzarella cheese
Accordion slice the bread making sure not to cut all the way through. In saucepan or microwave melt the butter with the garlic. Once it's melted add the basil and the cheese. Mix well and place in between the slices of bread. Bake on a sheet tray in a 375 degree oven for 10-15 minutes until the cheese is melted.
