I promised I would share one of my own meatless recipes occasionally as part of the Meatless Monday series, and this Stir-Fried Tofu with Scallions, Garlic, Ginger, and Soy Sauce is one of my very favorite ways to cook tofu. If you're not that practiced at stir-frying, this recipe has a link to some stir-fry tips that will make sure you get a good result, and this tofu dish with so much flavor from the scallions, garlic, ginger, and soy sauce will turn just about anyone into a tofu convert!
