1 bag of Tortilla chips
1.25 lb sirloin steak, trimmed of fat and cubed
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp chili powder
1/2 tsp paprika
1 tsp salt
1/2 tsp pepper
1 tsp onion powder
1 tsp garlic powder
16 oz velveeta cheese (I use the block), cubed
1 can Rotel (I used the Original)
About 2 C shredded lettuce
pico de gallo (I made mine homemade)
8 oz Sour Cream
Using a medium sized saucepan add the can of rotel and the cubed velveeta to the pot. Heat over medium, stirring occasionally until cheese is melted and it looks just like queso dip.
Heat a heavy skillet over medium-high heat with about 1 tablespoon of olive oil. Season the steak with the spices and add to the hot skillet. Sear to your desired doneness (is that even a word?).
While the steak is searing away, make sure to get your chips on a platter and get your lettuce and toppings ready.
When the steak is done spoon the cubes over the chips then pour the queso on and top with lettuce, guacamole, sour cream and pico de gallo, or whatever toppings you have chosen to use.
