I included in my blog description that I may put some recipes on here from time to time.  So, as not to make a liar of myself, you’ll find one that I created below.  My eating habits are generally very healthy, but once the fall weather hits I turn into a comfort food junkie.  In the last month, I’ve made two homemade chicken pot pies, carrot cake with cream cheese frosting, and approximately 30 lbs. of lasagna for my uncle’s birthday party.  The other day I sat in front of the computer eating a cupcake the size of my head while reading an article on clean eating.  “All in moderation,” right?  Below is a healthy recipe to enjoy so that your waistline does not expand like mine will be for another 5 months.

 

Low carb, low sugar peanut butter choc. chip cookies

They’re a little crumbly unless you eat them right away, but a little applesauce in the mix could also fix that

1 cup all natural peanut butter
1 large egg (beaten)
1 teaspoon vanilla extract
5 individual packets Truvia or Stevia
1/4c unsalted butter (melted)
2/3c almond meal (I like Trader Joe's)
1/8 teaspoon salt
1/3c semi-sweet choc. chips

Spoon tablespoon size portions and roll into balls, flatten slightly onto a cookie sheet lined with parchment.

Bake approx. 10 minutes at 350, makes approx. 18 servings
Each cookie:
76 calories                                                                                                                                                           11.9 grams of fat
3.7 g sat fat
7g carbs
1.3 grams fiber
3.2g sugar
4.2g protein
