For a week or so I've been wondering what would be the perfect meatless recipe to start the new year. Then I realized that the first Monday of the year is also the first Monday back to work for many people who've been enjoying the holidays. That's when it hit me that the perfect meatless meal for a re-entry Monday like this one would be a slow cooker recipe you could put in the slow cooker in the morning and cook on low while you're at work! Unfortunately I'm not sharing this recipe early enough for you to have done that today, but I'm sure that Slow Cooker Vegan Sweet Potato Chili from A Year of Slow Cooking would also taste great on Tuesday!
