It is hopefully, one of the last really cool evenings that we will have. All Winter long, I have thought about making chicken pot pie. I really can't say why I have been feeling the need to make this particular dish, but I decided that I would go for it.
I used to make a chicken pot pie when my darlings were little. It was the recipe that called for two frozen pie crusts, cream of potato soup, frozen mixed vegetables, a little milk and chicken. One of my darlings loved it and one of them hated it. It would just turn her inside out to have to eat it. I allowed her to have cereal on the occasional night that it was served. Now, I feel the same way she did about this recipe. But I still like pot pie and there is a local restaurant that makes one that is really good. I am going try this tonight but plan to change some things up a little. I will use some milk and some chicken broth and add potatoes, as suggested in the reviews. And I am going to bake the puff pastry but not do the weaving/lattice thing that is described. The restaurant version just has a piece of the pastry in the middle of the bowl, and that is perfection. I will use some of my own cooked chicken that I flavored with celery, onion and some boullion.
A few hours later...
Ok, so I did all that. And the verdict is that it was ok, but I want creaminess in my chicken pot pie and this recipe as it is written was not so creamy. The puff pastry was great, although I had some concern when I baked it for ten minutes, per package directions, took it out of the oven and it immediately became flat as a pancake. But it revived when I laid it over the chicken mixture and put it back in the oven. The chicken was tender and flavorful. Darling husband and my mom liked it. The veggies were good, although we added more salt and fresh ground pepper at the table. Next time, I will try making 1-1/2 times the milk/broth mixture, try fresh sauteed carrots and probably just go with the frozen peas, since I haven't seen any fresh peas at the store. I will need one more cool day in the next week or two to try this again. And if you have any suggestions or a to die for chicken pot pie recipe, please share:-)
