Sausage Crust Spinach Quiche

Delish! Breakfast or brunch. Super easy and my husband's favorite. We've been experimenting with the Paleo diet/ lifestyle. We're about 6 weeks in and we both feel amazing! Quiche is one of my all time favorite foods and the one food I so deeply miss. Paleo's grain-free so my quiche's with whole- wheat crust are out of the question. Made some frittatas but think I hit the jack pot with this one!!

What you need:
Pie pan
8 eggs
1 box frozen chopped spinach, thawed and drained
1 breakfast sausage roll (either turkey or pork)
1 onion
1 tbsp fresh garlic, chopped

How to:
Chop up the roll of breakfast sausage
Cook the breakfast sausage in a frying pan, add onions and garlic
Once sausage is cooked, press it into pie dish
Scramble eggs together
Stir in spinach
Pour onto pie dish covering sausage
Cook covered for 30 minutes on 325 degrees
After 30 minutes, uncover & raise oven temperature to 350 and cook for another 30 minutes
