It’s been almost a month since my last post, but I promise I have a good excuse! We welcomed our little girl into the world on May 22nd! She is beautiful and perfect in every way. I will share a picture in another post, but rest assured, she is beyond adorable! Since her arrival, I’ve been spending most of my time reveling in her cuteness…and breastfeeding. Lots of breastfeeding!Because of this, I’ve stuck to a pretty simple meal plan and recipes even my hubby can pull off. This recipe for roasted brussels sprouts is one of them!
Olive oil and a few spices is all you need to make these brussels sprouts go from boring to delicious. Even my kiddos (the older two) gobbled these up! Served with chicken or fish, these make a perfect and simple side dish that is sure to be a hit!
Roasted Brussels Sprouts
Yields 4 Servings
1 Pound Fresh Brussels Sprouts (tough ends cut off)
1 Tablespoon Olive Oil
1/2-3/4 Teaspoon Kosher Salt (to taste)
1/2 Teaspoon Fresh Ground Black Pepper
1/4 Teaspoon Garlic Powder
Preheat oven to 400 degrees. Place brussels sprouts on a baking sheet and drizzle with olive oil. Sprinkle spices evenly over the sprouts and then toss well to thoroughly coat all pieces. Place on the center rack of your oven and bake for 40-45 minutes or until brussels sprouts are tender. Toss occasionally while roasting to ensure even cooking. Serve and enjoy!
