Ring in the New Year: Leave Junk Behind!

Here are some more recipes as promised. I am going to include the veggies, dips and sweets! These are healthier recipes.  Well let’s just get into it.

 Recipe: 1

Stuffed Mushrooms

Preheat oven 375 degrees

Ingredients:

12 button mushrooms

2    wedges of Laughing Cow cheese

2 tbsp chopped fresh chives

¼ cup of chopped green pepper

1 tsp garlic powder

1 tbsp dried parsley

Reduced-fat Parmesan-style grated cheese

Salt and pepper to taste

Optional a few drops of Tabasco

What to do:

Cut off the stems of the mushrooms and chop up.

Add all ingredients to a bowl and mix.

Spoon the mixture into the button mushroom tops.

Sprinkle some of the Reduced-fat Parmesan-style grated cheese on top.

Place all the stuffed mushrooms onto an aluminum foil covered baking sheet.

Bake for 20 – 25 minutes. Then serve!

 

Recipe: 2

Grilled Veggies

Preheat oven 450 degrees

Ingredients:

Zucchini

Asparagus

Red Onion

Green, Red, Orange Peppers

Salt and pepper to taste

2 tbsp Olive oil

What to do:

Cut zucchini into circles

Remove hard stemmy parts on asparagus

Cut onion into thin slices

Cut peppers into strips

Place on an aluminum foil covered baking sheet.

Add oil, salt and pepper and other spices.

Mix with hands and bake for about 20 minutes.

 

 

Recipe: 3

  Spinach Dip

Preheat 325 degrees

Ingredients:

4 oz of fat free mozerella cheese

4 tbsp of fat free sour cream

10 tsp of Reduced Fat Parmesan Cheese

2 tsp of garlic powder

6 tbsp fat free mayo

10 oz package of chopped spinach thawed and drained

4 oz water chestnuts, chopped

3 tsp dried onion bits

What to do:

Mix the ingredients into a bowl together EXCEPT the parmesan cheese. Then put into a baking dish.  

Add the parmesan cheese on top and place into the oven.

Serve with fresh veggies or low sodium, low fat crackers!
