Christmas is just about 2 weeks away, we've done zero shopping and our halls aren't screaming Christmas cheer... Honestly, I've been hoping some little elves would get the job done while we're asleep!
No such luck!
Our schedule was thrown all out of whack after we returned home from our trip last week. Does that happen to anyone else!? Wish us luck because this week we have to finish decorating the trees and the house (and the outside of the house, SUGGESTIONS!?) and gather gift ideas!
Whenever I get stressed, I cook! Time was limited yesterday so I threw together Crock-Pot Meatball Subs. Sofia loved them and we had leftovers for lunch today! Total win.
Crock-Pot Meatball Subs
Recipe makes 16ish meatballs (depending on how big/small you like your balls! ;)) Sorry,had to!
1.5 lbs ground beef
1 cup Italian bread crumbs
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 Tbsp. Worcestershire sauce
1 egg, beaten
Salt and pepper, to taste
One 28-oz. jar pasta sauce
One 16-oz. can crushed tomatoes
One 14.25-oz. can tomato puree
1. In a Crock-Pot, mix together all of the sauce ingredients.
2. In a bowl combine all of the meatball ingredients then shape into medium balls and drop into the Crock-Pot.
3. Cook on low for 6-8 hours
4. Place on sub rolls and top with mozzarella and pour yourself a BIG glass of vino!
*If you don't have that much time, you can cook the meatballs in the oven at 400 degrees for 20 minutes and then drop into the sauce for an hour.

Here's what's cooking for the rest of the week!
Monday| Chicken sandwiches (frozen Perdue patties!) with mixed veggies & Velveeta
Tuesday| Maid-Rites, I can't get enough of these, they're like ground up moist & tender burgers! Make sense? Try them and you'll understand! Served with steamed broccoli and crinkle fries.
Wednesday| Baked chicken fajitas, one pan to clean is our kind of meal! Served with the works: salsa, guac, hot sauce, lettuce and enough cheese to make Wisconsin happy.
Thursday| One-pot pasta, I've seen this recipe all over Pinterest, hope it's as good as it looks! Served with grilled Italian chicken, we marinade chicken in Italian dressing for 30 minutes then cook it up on the grill. The pasta will probably fill us up but it's not a meal to me without meat.
Friday| Dinner out for my little sister's birthday!
Saturday| Homemade chicken noodle soup with cheesy garlic bread, all of our snow days has us craving comfort food. Speaking of comfort food, I baked Christmas cookies and Mike has already had 15!
