Real Meat? No, Real Mushrooms

Fettucini Mushroom Ragu by The Wednesday ChefLuisa from the New York food blog The Wednesday Chef knows what she wants: the real thing.

She writes: "I'm not one for meat substitutes. Give me steak or don't, but please don't make me pretend that grilled tofu cloaked under some peppercorn sauce is meant to stand in for a juicy, rare side of beef, or that tofu crumble - for Pete's sake - is meant to be eaten by beings, human or otherwise, in an otherwise perfectly acceptable ragù."

For a taste of Luisa's great prose and a recent vegan friendly (just leave off the cheese) quick-supper recipe, pull up a chair for Fettucini with Mushroom Ragu. Be sure to mention you're visiting from Blogher and share your own definition of the 'real thing'.

BlogHer food editor Alanna Kellogg thinks the 'real thing' just might include both meat and mushrooms, perhaps in a Beef & Mushroom Stew.
