It's Memorial Day, which marks the unofficial arrival of summer in the United States. Summer means picnics and barbecues, and if you're looking for an unusual meatless salad option to take to a summer gathering I highly recommend this Raw Baby Kale Salad with Apples, Sunflower Seeds, and Lemon Dijon Vinaigrette that I posted recently on Kalyn's Kitchen. The recipe is not only incredibly tasty, but it's vegan, gluten-free, loaded with nutrients, and unusual enough that it will probably intrigue your friends. And I think a salad with fruit is perfect for the first Meatless Monday of summer, when everyone starts to think about eating lighter meals.
