Most nights I run home and start dinner. I also LOVE a home cooked meal! Here is my take on a semi-homemade meal: Pesto pasta with Chicken (I need protein), and Grape Tomatoes. Prep time 5 min., Cook time 15 min., serve 5 min.
What you need:
Fresh Grape Tomatoes
Pesto Sauce (found in spaghetti sauce isle)
Small amount of Olive Oil
Salt & Pepper
1. Defrost chicken, and get water to boil
2. Place about a tablespoon or two in a pan and heat oils and chicken together (I cut chicken for quicker cooking time). Salt and Pepper chicken.
4. Make sure the meat is cooked the whole way through and add in your tomatoes for 2-3 min.
5. Drain your pasta
6. Prepare Pesto as directed. Mine says I can just stir the pesto in jar then add to pasta while warm.
Enjoy this with a glass of wine, some water, or a SunDrop! For the frugal shopper: I used the tomatoes last night in salads and bought bulk packs of frozen chicken. For the creative type: try this dish with Asparagus as an alternative or supplement! Please let us know if you tried this at home or what you did to make it even more yummy!
