Penne with Red Wine and Chunky Vegetable Meat Sauce
Such an easy and tasty dish to please the whole family.
1 box of Gluten free penne noodles
1 lb of Organic Ground Beef
1 16 oz can diced tomatoes (keep juice)
1 small can of tomato paste
4 green onions+ 1 for garnish
1/4 c fresh parsley + some for garnish
2 tbs of minced black olives
1 mini each--red, yellow, orange bell peppers
1/2 large red onion
1/4 c of grated cheese of choice for garnish
2 tbs of minced garlic
4 tbs of olive oil
2 tbs each of ..oregano , basil ,Italian seasoning
1 tbs of Thyme
2-3 tbs of kosher salt
1 tbs of coarse black pepper
1/4 c or red wine
1/2 c water
Saute the peppers, onions, garlic, with the olive oil for about 2-3 minutes.
Then add tomatoes, olives, parsley, green onions , seasonings. stir and simmer for 2-3 minutes.
Then add your ground beef and cook just until done.
Then add the wine, water , paste. Simmer on low for about an hour to reduce to a thick and lushes sauce. Stir periodically to make sure everything cooks evenly.
Boil and drain noodles.
Return to pot you boiled them in and add a little of the sauce to mix up the noodles.
Ladle some of the noodle mix in a bowl then ladle extra sauce and garnish with cheese, green onions and parsley.
