Once again, I had nothing to go on this week for my vegetarian meals. I think the real issue is I am waaaaay too busy on the weekends, and have no time to plan my meals anymore. It is becoming an issue for sure. But this dinner actually turned out to be one of my favorite thrown together meals, and it was super simple and I can almost guarantee you have everything you need.
I decided on this meal in the morning while I was cutting tomato slices for my salad. I realized, once again, I had nothing planned for dinner. Then I thought, "I will have leftover tomato". Then I thought, "I have parmesan cheese". Parmesan tomatoes it is!
Yup, that is about all you really need. Some olive oil, parmesan cheese, a tomato and basil. Note how, once again, I have a partial ingredient, aka half a tomato. Hey, I am trying to be frugal here!
