'Our’ Valentine's Day: Salmon and avocado tartare with red rice

Hallo everybody: www.sicilianicreativiincucina.it have created this starter for Valentine's day menu. We opted for a menu of fish and 'choreographic’ in the combinations and colors: because the atmosphere is very romantic we focused on the presentation, strictly by candlelight. Today we present the appetizer, very simple: a tartare of salmon and avocado accompanied by red Camargue rice and crispy vegetables.

 Ingredients for 2 people:

  • 200 grams of raw salmon (already demolished)
  • 100 grams of red Camargue rice
  • 1 avocado
  • extra virgin olive oil to taste
  • 1 carrot
  • 1 celery
  • salt and pepper to taste
  • the juice of one lemon
  • the green parts of a fag

Clean the salmon depriving the skin and thorns and cut it with a knife into cubes not too small. Put them in a bowl with 3 tablespoons of olive oil and the juice of half a lemon, mix well and leave in the fridge to marinate for about 15 minuti. Meanwhile, cook the rice in salted water. Wash and peel the carrot and celery and cut lengthwise into sticks very thin and sauté for 2 minutes in a non-stick pan with a teaspoon of oil. Season with salt and set aside. Peel the avocado and cut into cubes not too small: season with two tablespoons of olive oil and the juice of half a lemon and was put in the refrigerator for 10 minuti. When the rice is cooked, drminutesll and season with a tablespoon of oil to polish the grains. Serve in large rectangular plates or otherwise: in a pasta bowl put the rice, pressing it well with a spoon and arrange on top of the sauteed vegetables, next - always helping with the pasta bowl - put the avocado into small pieces, arrange over the salmon tartare and garnish with the green of the fennel.
