They are gluten free, dairy-free, filled with wholesale grains and other fantastic, nutrient-rich ingredients. I've played around with a lot of pancake recipes, and for being gluten and dairy free, these are perfect and kid-pleasing.
1 cup spelt flour (we love Vitaspelt)
1/3 cup steel cut oats or whole grain oats
2 tsp. flax seed or chia seeds
1/2 tsp sea salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp. cinnamon
1 tsp. vanilla
1/2 cup coconut yogurt (we love So Delicious)
1- 1 1/2 cups coconut milk/hazelnut milk/almond milk
1/4 cup applesauce
In a small bowl, blend all dry ingredients (flour, oats, flax/chia seeds, salt, baking powder, baking soda, and cinnamon). Gently add 1 cup of milk, yogurt, applesauce, and vanilla. Blend well. If too thick, add additional milk until workable, but not too thin. Let sit for 5 minutes.
Lightly oil a skillet heated to 325 degrees. Dollop batter into skillet and cook on both sides for about 4 minutes per side. All skillets will vary, so watch closely. Serve with honey or maple syrup.
