Oatmeal bread with coconut and dried blueberries

This is a rendition of the oatmeal muffin with orange zest and cherries I posted a week ago. I love the way the sweetened coconut flakes browned up. When you cut into the bread some of the coconut and blueberries will fall off. But that’s ok because then you can pile them on your piece. I slathered a little bit of hazelnut spread on mine too. Yum Yum

Servings 6 large pieces


  • 1 cup oats
  • 2 cups flour
  • 1 teaspoon baking soda
  • 3 bananas mashed in blender
  • 1 orange juice and zest
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 1/2 cup dried blueberries
  • 1/2 cup sweetened coconut flakes


  1. Preheat oven to 375 degrees
  2. Mix together dry ingredients of oats, flour, baking soda
  3. Mix together wet ingredients of banana, orange zest, juice from one orange, maple syrup, and water
  4. Mix together wet with dry ingredients and then add dried blueberries and coconut
  5. Spray bread pan
  6. Spoon mixture into bread pan
  7. Sprinkle dried blueberries and sweetened coconut
  8. Bake approximately 43-45 minutes
