It's been awhile since I posted a recipe and you know I'm always on the lookout for a good recipe that I can Paleo-ize. I also love cooking with international flavors and Morocco was somewhere I had not ventured. So when I came across this recipe from Half-Baked Harvest, I had to give it a try. And I must say, it's become one of my favorite new recipes. To make it Paleo, I use quinoa instead of the couscous and omit the goat cheese. Now I'm only 80/20 Paleo so I do eat the goat cheese, but my 100% Paleo daughter omits it.
