Every weekend when I was a kid, my maternal grandmother would make us our favorite breakfast: an egg and SPAM sandwich.
It seems simple enough, but it was the best thing I’d eat all week.
She knew the affinity my brother and I had for Egg McMuffins, and decided it would be easier and probably better for us if she’d tried to make it herself instead.
What my grandmother’s sandwiches lacked in cosmetic beauty, she made up for with a lot of love and tasty goodness. That’s something you’ll never get from the Golden Arches.
She’d start with English muffins, melt a slice of good old American cheese on it, fry up an egg over easy, and then fry two slices of SPAM in place of ham. Many Asians and Hawaiians have at least one can of SPAM in their pantry. It’s just a cultural thing, I guess.
My grandmother left us 15 years ago, but my husband decided to take on the recipe. Now, every time he makes it on the weekends I still feel her love, and a little bit of my husband’s too.
Grandma’s Egg and Spam Breakfast Sandwich
2 slices of SPAM
1 large egg
1 slice of American cheese (or cheddar)
1 English muffin, split
¼ Tbsp. butter
Toast the English muffin, then place a slice of cheese on one half and cook in the microwave for 20 seconds to melt. Set aside.
Heat a small frying pan on medium heat. Then place your SPAM slices and let fry, no oil needed, for 1 minute each side. Remove from pan and place the slices evenly over one half of the muffin.
In the same frying pan, melt the butter on medium heat. Then crack the egg into the pan and let and cook for 2 minutes (that’s the average, so give it a little less time if you like it runnier). Sprinkle with a little pepper if you desire. There’s no need for salt because the SPAM and cheese are salty enough.
Then flip the egg over and cook on the other side for another 1-2 minutes. Remove immediately from pan onto the muffin half. Top with the other muffin half.
