Melted Peanut Butter Chips & Apples!!!!

 I was trying to come up with a treat for the kids I had coming over for Labor Day and its not always easy when the ages range from 3 – 12! I wanted it to be sweet but also a little healthy so that both kids and parents are happy! :) So, I thought because my daughter Laila and most kids I know snack on apples with peanut butter, I would take that concept and put a fun twist on it!
Here is what I did: I bought apples already sliced ( so easy and most grocery stores all have them now ) and then I took cake pop sticks ( I got these at Target) and pushed the stick into the bottom of the apple. ( make sure you don’t press to hard or it will go all the way through and then the stick won’t be secure – obviously I did this and messed up a few so I’m sharing it with you! LOL :) Then take peanut butter chips and melt them on a double boiler (It’s so easy, just take a glass bowl and place it over a pot with about an inch of water in the pot making sure water does not touch bottom of the bowl. Then add 1 cup of the peanut butter chips and bring the water to a simmer until the chips start to melt. Then carefully stir the mixture until it is smooth and then turn off the heat.
Next take each apple with the stick in it and with a plastic baking spatula spread the melted peanut butter mixture on each apple. Then place the apples on parchment paper and transfer them to the refrigerator for a few hours until they have set. Once they are done put them on a serving platter and let the kids enjoy!

These are so good they taste like a candy apple and this treat is perfect for all the up and coming fall and Halloween parties too!
