4 Wild Salmon filets olive oil salt pepper 1 lemon, sliced thin 1/2 red onion, sliced thin 2 plum tomatoes 1/4 cup kalamata olives 1 teaspoon fresh oregano, chopped 4 Pepperoncini peppers, sliced thin 1/2 cup feta cheese 1/2 cup white wine
Ok… anyone that knows me knows that I absolutely hate salmon. To me it’s way too fishy. BUT, this recipe will change your mind. My mom and I came up with this recipe after I brought home a huge chunk of feta from Greece (I’m pretty sure I snuck it in illegally…shhh) and didn’t know what to do with it! I’m not joking, there’s not an ounce of “fishy” with this recipe. This is such a great dish to make for one, two, three, or a crowd of people! The first thing you want to do is preheat the oven to 350*F. In a baking pan put your salmon filets skin side down. Drizzle the salmon with olive oil and sprinkle with salt and pepper. Put three slices of lemon on the top to cover the salmon. Add the slices of onion on top of the lemon. To the top of the onion add the sliced pepperoncini, plum tomatoes, kalamata olives, feta, and oregano. Add the wine to the bottom of the pan and pop in the oven! Cook for 30 minutes, take out of the oven, and prepare for heaven…. salmon heaven that is. I like to serve with some cous cous and a salad. Easy, healthy, and delicious. Enjoy!
