Two words drew me in to this recipe for Roasted Vegetable Pita Sandwiches from Two Peas and Their Pod, and those two words were: Roasted. Vegetables. If you haven't tried roasting vegetables, I am urging you to try it this week. And while roasted vegetables are good pretty much any way you use them, these pita sandwiches also involve feta cheese and tzatziki sauce, which makes them even better!
