I don't think we've quite entered the season where it's mandatory to eat zucchini at every meal, but it's coming. Too much zucchini might be what my mother used to call "a good problem to have" for adults, but kids can turn up their nose at zucchini dishes that adults happily consume. That's one reason this Meatless Zucchini Lasagna from Mel's Kitchen Cafe is such a find. The lasagna is delightfully cheesy from a combination of cream cheese, ricotta, and mozzarella, and Mel says her kids will gobble it up. The recipe also includes homemade sauce and no-boil noodles, and I'd say this is a Meatless Monday zucchini recipe that's worth turning on the oven for.
