Most places in the U.S. are starting to have colder nights, and I know fall has really arrived when I have to put a blanket on my bed. I don't always welcome the cold weather, but what I do love about winter is making soups in the slow cooker! There's nothing quite as comforting as the smell of soup spreading through your house, and this hearty Slow Cooker Vegetarian Pasta e Fagioli Soup is quickly becoming one of my favorites for Meatless Monday. I cooked the soup with a piece of Parmesan rind to add flavor and sprinkled Parmesan on top, but the soup can easily be vegan if you skip the cheese.
