I have fond memories of my mom's corn fritters, so that's probably why any recipe with "fritter" in the title will get my attention. These Ricotta and Spinach Fritters from Aggie's Kitchen have sliced fresh spinach to make them nutritious, grated Parmesan to add flavor, and eggs and bread crumbs to help hold them together. After reading through the recipe and seeing Aggie's drool-worthy photo, there was no doubt in my mind that these were a Meatless Monday winner, but if you need more proof, visit the blog and see the photo of Aggie's cute daughter gobbling them up!
