I love experimenting with the fresh flavors of summer garden veggies, and right now you should be making the most of them before they're gone for another year. Recently I came up with this new recipe for Grilled Zucchini Caprese Stacks with Basil Vinaigrette, combining zucchini, garden tomatoes, and fresh basil, definitely three of my favorite summer ingredients. This is a Meatless Monday appetizer or light main dish that's sure to wow your family or friends, and it might just be my favorite new recipe of the summer; hope you enjoy!
