I'm always in favor of Greek food, and through the years I've certainly gobbled down plenty of gyros made with meat. But I also love grilled vegetables, and when I saw this idea for Grilled Vegetable Gyros from Oh My Veggies, it sounded like a perfect Meatless Monday dish. Mushrooms, red bell pepper, zucchini and onions are grilled (or cooked in a stovetop grill pan if you don't have a grill.) Then they're served inside warm pita bread with the traditional cucumber-dill sauce that always makes gyros taste so amazing.
